For our peel we choose lemons from the Ligurian Riviera, with fragrant skin rich in essential oils and a fresh, intense aroma.

THE ARTISAN PROCESS

The lemon peel is hand-cut and slowly candied following the old Genoese tradition, through progressive dips in sugar syrup over up to 15 days. Once candied, it's hand-coated in sugar and finally dipped in 64% dark chocolate, creating a refined balance between the citrus freshness of the lemon and the intensity of the cocoa.
