THE ARTISAN PROCESS

The pine nuts are selected one by one and worked with only gum arabic and sugar syrup, with no starch or wax. In the traditional basins they rotate slowly while the confectioner adds the syrup a little at a time, with great care, until a thin, even coating is achieved.

We use only Italian pine nuts.

Why are pine nut confetti so small?

The small size comes from the natural size of the pine nut. Each confetto contains a single seed: we add only the thinnest veil of sugar so as not to alter its natural proportions.

What do candied pine nuts pair with?

Pine nut confetti can be enjoyed on their own or with coffee, tea and dessert wines. They're also ideal at the end of a meal, to fully appreciate their delicate taste and elegant aromatic notes.

Do the different colours correspond to different flavours?

No, candied pine nuts don't contain any added flavourings: the different colours are purely decorative and don't change the taste of the product.
