Bold, warm and lingering, Cayenne pepper has a medium heat level, between 30,000 and 50,000 Scoville units, and is widely used in Cajun cuisine and the culinary traditions of the American South. With a clean aromatic profile and direct heat, it doesn't mask a dish's original flavour but enhances its aroma and character.
In the kitchen, generally used ground, it is ideal for hot sauces, soups, pulses, curries and meat or fish dishes. Also interesting in sweet pairings, with mango, honey and chocolate.

The name "Cayenne" comes from the city of Cayenne, in French Guiana, from which the chilli takes its name. It's one of the most widely used varieties for making classic chilli powder.
