Intense and complex in aroma, the rare Voatsiperifery releases balsamic, faintly minty notes, with a bold, unmistakable character. Unlike common pepper, its heat is soft and builds gradually, letting delicate citrus notes come through.
Ideal with red meats, grilled dishes, vegetables and mushrooms, best added at the end of cooking to preserve its aromas. It pairs particularly well with dairy and goat cheeses, as well as fish tartare. It also shows surprisingly well in pastry-making, with dark chocolate, ganache, fresh strawberries and tart fruit sorbets.

The plant, a wild vine, grows in the shade of great tropical forests and can reach 15-20 metres in height. It's harvested exclusively by hand by local pickers, who climb into the canopy to select the ripe clusters, making this pepper particularly rare and precious.
