Intense and enveloping in aroma, tonka bean releases notes of bitter almond, vanilla and mountain hay. Native to South America and taken from the seeds of the Cumaru fruit (Dipteryx odorata), it is a precious spice from the Amazon rainforest.
In the kitchen it is best used freshly grated at the end of preparation: ideal with chocolate and baked desserts, or infused in brown sugar to flavour coffee and confectionery. Beyond desserts, it also pairs surprisingly well with savoury dishes, particularly pumpkin, shellfish and white meats.
