Skilfully cooked and scented with natural essences, the sugar is transformed into delicate pastilles following Genoese confectionery tradition.

Sugar, water, natural flavourings. Colours: vegetable extracts, concentrate of radish, sweet potato, safflower, blackcurrant, lemon and spirulina.

THE ARTISAN PROCESS

Sugar is dissolved in water and cooked until creamy. Still warm, it's worked by hand with a spatula, rubbed against the sides of the pan to start crystallisation. The mixture is then poured into the old 1950s depositing machine which, with an intermittent motion, drops it onto steel blades, where it cools quickly, turning into the small pastilles with their characteristic crisp texture.
