Respect for time and the quality of ingredients define the philosophy behind our artisan colomba, a symbol of peace so dear to Romanengo that it has become part of its identity over centuries of history.

Over forty hours of work, a strengthened sourdough starter, one of the highest proportions of egg yolk, and Italian wildflower honey give the dough a naturally soft, structured, deeply aromatic character.

Combined with our clementines — slowly candied over up to fifteen days following old tradition, with no preservatives or artificial flavourings — this leavened cake gains a unique fragrance and texture.
