Sweet, warm and slightly woody, Ceylon cinnamon has an elegant, delicate, refined aromatic profile. Native to Sri Lanka and belonging to the species Cinnamomum zeylanicum, it is considered the finer, more prized variety compared to cassia.

Its thin sticks are ideal in pastry-making, with custard, cooked pears and apples, and also for flavouring coffee and ice cream.
