THE ARTISAN PROCESS

The coffee beans are first roasted to bring out their aromas, then sugar-coated and scented with aniseed. In the traditional copper basins, the confectioner adds sugar a little at a time with the "lavesino", creating a thin coating with an irregular surface that wraps the bean without altering its aromatic intensity.
